Harvesting takes place from December to February, when the sun´s rays penetrate in a gentle and indirect way due to the trees that shade the coffee plantation and because these are the coldest months of the year with the fewest hours of daylight. Harvesting is done entirely by hand by the farmers of the region, selecting only the fruits at their optimum degree of ripeness, the freshest, firmest and brightest. This practice makes it necessary to make up to three cuts on the same plant, which makes it possible to obtain a coffee of superior quality.
